PAI MU TA
China Pai Mu Tan 1st Grade KBA (German Organic Certification) white tea is also called Bai Mu Tan or White Peony - a superb white tea from the Fujian Province. This tea is harvested and processed during early spring by carefully selecting only the finest tender buds and top two leaves. The leaves should be a certain size and offer a mix of light and darker greens and silver buds to create its unique taste. It is traditionally processed by withering and air drying, and the blend of leaf colours will yield a clear light straw cup colour.

MORNING DEW
Morning Dew is a wonderful blend of our China Pai Mu Tan 1st Grade KBA (German Organic Certification) white tea and organic peppermint leaves and makes bright fresh infusion especially good in the mornings and after dinner as a relaxing digestive.

SILK WAY
Silk Way is a blend of our China Pai Mu Tan 1st Grade KBA (German Organic Certification) white tea white tea and sunflower petals and it makes soft and serene infusion particularly good in the afternoons.

JAPAN SENCHA
This Japanese Sencha green tea is a premium quality tea and is produced in the Shizuoka prefecture, south west of Tokyo. Shizuoka has a unique climate compared with most of Japan, it never gets very cold and soon warms up in the Spring, and the water is very pure as the streams flow from Mount Fuji. This is 100% premium quality Sencha green tea and despite the fact that mechanical plucking is used Japanese Sencha is generally considered to be best Green tea in the world. This tea is semi fermented it is steamed and hand rubbed and then pan-fried to stop the fermentation, all these processes give this large leaf tea its distinctive glossy appearance and feel.

THE MUSE
The Muse green tea contains gingko leaves, pink peppers and small freeze dried strawberries and is based on a premium quality Sencha. It is a green tea full of surprises, with a wonderful aroma and taste to match. If you though that you didn't like green tea try this, and you may be delightfully surprised.

PEACEFUL GREEN
Peaceful Green is a beautiful tea both visually and to taste, with aloe powder and pink rose buds and petals and based on a 1st grade Sencha. It makes a soft, smooth infusion that is high in antioxidants and has a sweet gentle aroma and taste. Do not over brew as this is a delicate light tea.

ASSAM BUKHIAL TGFOP2
Bukhial is a very special tea estate owned by the Williamson & Magor, the world's largest family owned tea company, it covers 2052 acres of which around 1420 acres is tea plantation. Bukhial is located in Golaghat District of Assam, close to Nagaland where wild elephants still roam. Rainfall in this area is modest, making near perfect growing conditions as the tea bushes grow slowly, which gives this 2nd Flush its mellow and distinct malty character. It should be to be savoured and contemplated. This is a 98% Ethical Tea Partnership certify tea.

EARL GREY
Earl Grey Ceylon black leaf tea is blended with oil extracted from the citrus Bergamot fruit and strewn with cornflowers. Stories vary as to how this tea got its name - one tale is that a British diplomat, sometimes it is Earl Grey himself, saved the life of a Mandarin and was given the recipe as a token of thanks; another that it was a gift for a successful diplomatic mission, however it is likely that none of the stories are true and just a marketing ploy whatever the truth, this classic scented tea has become synonymous with British teatime. It is probably the best selling scented tea in the world with a distinctive flavour and aroma. The tea is a blend from high growing plantations in Sri Lanka - Nuwara Eliya, Dimbula and Uva where classic “Ceylon” tea is produced with a floral bouquet and mild astringency that makes a bright coppery colour infusion just a perfect base for this tea, then only natural oil flavours and blue cornflowers are added giving this tea a clean and true character.

DARJEELING MARGARET'S HOPE FTGFOP2
Darjeeling FTGFOP 2nd Flush 'Margaret's Hope' black tea is a highly prized 2nd flush Darjeeling picked in May and June. Darjeeling is always and quite justifiably referred to as the 'champagne of teas'. This estate is located in southern Darjeeling with spectacular views of the Himalayas it is about 2000m high and here the Chinese type Thea Sinensis tea bushes grow relatively slowly in the cool climate and deep mists of the mountains. How did this estate get its intriguing name? In the 1930's the estate owner Mr Bagdon visited with his daughter Margaret who was enchanted by the tea garden. On returning to England she told her father that she hoped to return, but unfortunately she became ill and died. In her memory, her father changed the name of the estate to Margaret's Hope.

BOURBON STREET VANILLA ROOIBOS
This flavoured Rooibos has a wonderful toasty vanilla aroma which gives it an enticing and intriguing character it is also exceedingly smooth! A fabulous tea named after Bourbon Street in the heart of the French Quarter in New Orleans. Rooibos which means Red Bush in Afrikaans naturally has no caffeine and is high in iron, magnesium, potassium, calcium, zinc and Vitamin C. AFRICAN MIRACLE
African Miracle honeybush tea is harvested from Cyclopia Intermedia, a scented plant with yellow flowers and trifoliate leaves, which is cultivated around Haarlem in South Africa. This tea has a gorgeous fragrance from sunflower, jasmine & rose petals. It is naturally without caffeine and is high in iron, magnesium and Vitamin C.

RED DRAGON
Red Dragon is a robust and full fruit fla-voured tisane. Among its ingredients are three berries - blackberries, strawberries and redcurrants - along with apples, hibiscus and rose petals. The complete ingredients are as follows - Hibiscus blossoms, elderberries, sweet apple, currants, freeze-dried black-berry, freeze-dried strawberry pieces, freeze-dried redcurrants, rose petals & natural straw-berry flavouring. Again the fruits are freeze dried which truly adds to the flavour and depth. This is a delightfully robust tisane with gorgeous aroma that stands up well to sweet and strong tastes and is great with rich choco-late cakes or biscuits and as an after dinner infusion. Paradise fruit tisane is a refreshing and in-vigorating tisane. Its ingredients include lem-ongrass, hibiscus blossoms, sweet apple pieces, sour apple pieces, orange pieces, strawberry pieces, natural flavouring, & a small amount of Vitamin C. powder just to give this tisane a really truly healthy charac-ter! DARJEELING WHITE TIPS - WHITE TEA
White tea is quite possibly the most delicately flavoured drink available in the world today. White Teas are generally associated with China, and in particular Fujian province, but for many years India has produced white teas of very high quality. This is a very rare tea from Darjeeling grown at between 6000 - 7500ft above sea level, each leaf is hand selected making Darjeeling White Tip is the of the world's finest teas. The tea is produced using the two leaves found around a new tea shoot at the very top of the bushes. These are hand sorted and then gently steamed and dried under a soft heat. The result is an incredibly light fresh flavour with mild muscatel notes. Combine the unbelievable flavour with the facts that White Tips contains at least 3 times the antioxidant polyphenols of green or black teas, and has lower levels of caffeine, you really have the most marvellous cup of tea

ORGANIC WUYI ROCK OOLONG - OOLONG TEA
Organic Wuyi Rock Oolong is one of the purest teas from around the world. This rare Oolong comes from Mount Wuyi in Nanping Region, along the border of Jiangxi Province China. In 1999, UNESCO listed the mountain as a World Heritage Site in part owing to its outstanding biodiversity. According to the UN, Mount Wuyi is one of the World's finest, intact, subtropical forests, and it is also registered with the Chinese Government as a biodiversity conservation zone. The climate of the region is relatively humid as Mount Wuyi prevents cool air from entering the valley, and the Nine Bend River meanders through the valleys below. This whole region is breathtakingly pristine and many of the plant and animal species are unique to the area.
Here grows the world famous organic rock tea, these tea bushes are ancient, having grown amongst the mountain's rocky outcroppings for generations. Cultivation of the plants is almost impossible given the topography, so exceptional care is taken when handling and plucking the fresh tea shoots, light cotton gloves are worn when plucking and handling the leaves, which are harvested in small quantities, so as not to tire out the bushes. The fresh leaf is then allowed to naturally semi-ferment. Semi fermentation allows the edges of the leaf to turn while the middle of the leaf stays green. (This is the reason for the slight colour change from the edge of the leaf to the centre.)

MONKEY PICKED GOLDEN HUNAN - BLACK TEA
This Tea is grown in the mountainous growing region of Hunan province, throughout China it is known as the "Tea Country in the South.". Hunan province has been well known for centuries for producing some of China's finest teas and Monkey Picked Golden as one of the best examples of the quality this region has to offer. In some regions of Hunan province, an ancient local custom held that the first plucking of the tea bushes were to be picked by monkeys, this was due in part to the monkeys great dexterity, which enabled them to pluck the highly delicate leaves, and also because it was believed that they brought good luck and would ensure an excellent harvesting season. This tea is grown at 4000-6000ft above sea level and is a Special Tippy Orange Pekoe.
Monkey Picked Golden Hunan has beautiful golden coloured leaves, as this is the colour of the very top new buds of the tea bushes. These leaves are plucked very early in the morning and then hand sorted during production. Try running some of the leaves through your fingers and you will find them to be exceptionally delicate with a slight fuzzy feel to them - you can be sure that with leaves of this quality the tea is going to brew a very flavourful and delicate cup. Prepare yourself for what may be the best cup of tea you've ever had in your life! This is a truly fabulous brew!

PEREGRINE 1ST FLUSH MOUNTAIN - CHINA BLACK TEA
The Background - Peregrine 1st Flush Mountain is an ex-tremely rare and quite delicious black tea from Yunnan Province. The forested wild hills of Yunnan are home to the magnificent Peregrine Falcons and in some of the remote mountain villages Peregrines are revered as a sacred and spiritual bird, and wonderful legends regarding them flour-ish, so naturally since Yunnan is also where to some of the world's finest tea are grown there is wonderful fable in which a tea owes its existence to the Peregrine falcon! Over the years this extraordinary tea has come to be regarded as one of the best produced in Yunnan, it is manufactured dur-ing the spring Flush and is graded as TGFOP Special (Tippy Golden Flowery Orange Pekoe Special) - the cup overflows with vivacious maltiness and brews a beautiful golden cop-pery colour infusion.

COCHIN MASALA CHAI
This Chai is based on a blend of Assam BOP 2nd Flush ( Broken Orange Pekoe) and Kenya Nandi BP1 (Broken Pekoe1) both these teas are CTC (Cut, Torn & Curled) and the spices added are Ginger, Coriander, Cardamom, Cinnamon, Clove, Black Pepper.
The ancient city of Cochin is one of Southern India?s most impor-tant. It is for this reason that the city is sometimes referred to as the Gateway of Southern India. Throughout the centuries, the city, which is situated in the state of Kerala, came under the rule of many different masters. First came the exotically named Zamorin of Kozhikode (Calicut). It is believed however that the name of the city derives from the Chinese word “kochi”, given to the city by its next ruler, the great Kublai Khan.
Cochin however first came to prominence during the rule of the Portuguese around 1530. Their empire at the time was one of the world's most powerful and under their tenure Cochin developed into a very prosperous trading centre. After the Portuguese came Dutch rule in the mid 17th century, followed by the British, and finally, after Indian independence, Indian rule.
Traditionally this Chai would be brewed using milk instead of water. The same effect however, can be created by brewing your tea in the usual fashion and adding warm milk. Brew yourself a cup and be spiritually transported to old Cochin - truly superb tea.
To brew Bring filtered or freshly drawn cold water to a rolling boil. Place 1 a good teaspoon of loose chai per person: let the boiling water cool for around 20 seconds and pour into the teapot. Cover and let steep for 5-10 minutes (for true “chayee chayee” steep at least 7 minutes). While the tea is brewing prepare your cup to receive the Chai - put 2 teaspoons of sugar in the cup and add milk (about 20%) of the cup's volume. When the Chai is ready - pour into your cup.

INDIAN MOCHA CHAI
This Chai is based on a blend of three Orange Pekoe teas from Nuwara Eliya, Dimbula, and Uva regions in Sri lanka and the spices added are Cardamom, Cinnamon, Cummin seed, Coriander, Curry leaves, Lemon Grass, Fenugreek seed, Natural flavours. Indian Mocha Chai has a wonderful mellow flavour and a bright coppery appearance.
Chai is brewed with milk and a mixture of spices. Each recipe can be different depending upon the spices used. The word 'chai' liter-ally means tea (different languages use various forms of this word - for example Portuguese call it 'cha', Hindus call it chai, and in Chinese the sound of the symbol for tea sounds very much like cha.) Often a lower quality tea is used to make 'chai' as it is thought the spices will cover-up any deficiencies in the tea. We do not believe this and prefer to make our dry tea chai mix from real Indian spices and high-grown Ceylon tea. The quality of the tea elevates this chai to a new level..

SHERSTON BREAKFAST BLEND No1
is a great blend of black teas from Nuwara Eliya, Dimbula, Uva regions in Sri Lanka, Kericho Kenya and Nilgiri India all Flowery Pekoes making a perfect breakfast tea with good body and full tea flavour notes. Teas from Nuwara Dliya and Dimbula are drenched by the mon-soon during August & September and produces its best teas during January & February and are noted for their body and powerful aroma, Uva is on the eastern slopes and produces teas with a dis-tinctive mellow flavour and is world renown, the best tea here is plucked in June & September.
