CHINA WHITE MONKEY |
| China White Monkey white tea is cultivated on a very small scale in the famous Jiangxi district of the Seven Mountains. The annual harvest takes place in April and this is a first flush tea of outstanding quality. The leaves are rolled by hand to have the appearance of Monkey paws. This is sometimes classified as a Green Tea. |

CHINA PAI MU TAN |
| China Pai Mu Tan 1st Grade white tea is also called White Peony or Bai Mu Tan, from China’s Fujian Province it is harvested and processed during early spring by carefully selecting only the finest tender buds and top two leaves. The leaves should be a certain size and offer a mix of light and darker greens and silver buds to create its unique taste. It is traditionally processed by withering and air drying, and the blend of leaf colours will yield a clear light straw cup colour. |

| This large leaf white tea makes a clear, bright infusion with a smooth, highly refreshing taste. It is also rich in Vitamin C and can be enjoyed from the morning onwards. You can make several infusions from the same leaves, thus making this tea good value, but be generous with the leaf, probably a tablespoon and steep it in water temperature of 170–185 F or 77 – 80C for about 2 - 4 minutes. Do let the leaves stew as this can make the tea bitter, drain all the water off and then re brew with fresh boiled water for a second cup. |
